An 8oz bottle Is a great meal replacement, You need protein to help your blood sugars from falling, so always have a carb with protein peanuts,peanut butter and crackers,trail mix.. even pepperoni sticks are great to have on hand but always with a carb. Beans are good eat little bits at a time and check your sugar levels…I see diabetic counselor and he always gives great advice,  I am in the same boat. I am trying to find new foods that are acceptable and cut down on the carbs that I lived on prior to the diagnosis. I feel your frustration.
You can make yourself what is called a sub in a tub. Put everything you would eat on a sub in a container no bread. Even though bread has carbs a sandwich is not bad just don’t do it a lot. I eat a lot of turkey or chicken sandwiches with lettuce, tomatoes and cheese. Pack tuna salad or chicken salad. Drink lots of water. Try to stay away from the snacks like chips. Being a truck driver will be a little hard but it can be done. You can take thermos of soup There are diabetic drinks like Glucernna that are replacements for meals. A lot of weight watcher snacks are low in carbs and sugars if you need something like that. Lentil soup, bocca burgers, lettuce wraps, spaghetti squash, we love cottage cheese and avocado, quiche of different kinds. Probably wise to look at cookbooks and have a cooler for pre-made veggies and nut butters in zip locks, packaged meals and soups that are easy to heat up in road micros, salads, smoothies (get a nutribullet-so easy to clean and you can always find a plug or convert your truck lighter.) good luck, Not all fruits diabeties people can eat fruits green apple kiwi . I can find out for you there is a kind of herds . I am taking it my diabeties drop ,  It depends on your medication as much as anything, That aside, everything in moderation! I’ve been T1 for 15 years and eat what I want, when I want, Nuts and whole grains are good protein sources. Also maybe a shake like glucerna? My doc also suggested whole grain cereal like cheerios with almond milk, a lot of veggies, that are dense will cause rises. so can dried fruits, and juices. so look for veg based protein bars. thin are good no sugar and no animal protein. but get unsalted nuts. after eating take a walk. being behind the wheel for long periods of time will slow calories so you may need to take in less food. you did not mention whether you are one any meds. but if you just take a pill, I have found that your blood sugar will not go down as quickly. you may want to start testing more frequently to find what foods raise your blood sugar, and since you are on the road a lot pick up some books to educate yourself to find what works best for you. and do expect it to take a while, it does not go away quickly this is a life long process.
Check out the Decadent Diabetic. Also, smoked tofu is really, really good. Cheese and olives if you aren’t vegan. Lots of fantastic cheese. Hummis. Things like lentil stew are cheap and easy to make. Invest in, if you haven’t already, a soup thermos; insulated lunch bag; and a bento box. That way you can carry goodies with you like Greek yogurt or soy yogurt along with lentil stew. If push comes to shove, put some back up MREs in the cab for a long run or getting stuck – you have to eat or you will feel sick, Have been diabetic for over 40 years I keep my diet high protein but very very low carb. I have been healthy. Try legumes, beans , any greens that you can . Flat breads . Talk to your doctor he can put you in contact with a dietitian, Why do you want to change what you eat now? Just watch the carb intake, I keep carb intake at 60 carbs a day Not A MEAL. I would think being vegetarian would be goodI’m working on a plant base diet & trying to drop 30 pounds.
